But to me, chicken salads are so classic and I love them. Sandwiches are really all about texture, balance & ultimate flavor…the perfectly toasted bread, the crunch of the onions & lettuce, the juiciness of ripe tomatoes, cheese (you gotta have the cheese), whatever binds the sandwich together (i.e. mayo & mustard) & then the main thing…the protein!
I like my chicken salad to have some texture to it so I like to add celery & no matter what, dress your sandwich with dijon mustard…the tang with the creamy mayo with the chicken salad is *chef’s kiss.

Ingredients
1 rotisserie chicken, shredded
1/4 cup mayo (you know I love Dukes mayo)
1 tablespoon dijon mustard
2 celery stalks, sliced on a bias
1 small shallot, chopped
kosher salt & fresh cracked black pepper, to taste
bonus: a little tony chachere’s creole seasoning (it’s my weakness & I love it lol)
Sandwich Toppings
butter lettuce
tomato, seasoned with salt & pepper
dijon mustard (don’t skip)
smoked gouda cheese
thinly sliced red onions
toasted sourdough bread
Directions
Combine all ingredients together for chicken salad & taste to adjust seasonings…very simple!
Assemble all ingredients together in this order: toasted bread, dijon mustard, lettuce, tomato, onion, chicken salad, cheese & top with bread…yes, theres an art to assembling sandwiches so they don’t fall apart <3

This sounds like the perfect chicken salad sandwich! Chicken salad sammies are my go to when I’m at a deli. Smoked Gouda sounds like it is the perfect flavor profile for this. I’m definitely making this this weekend!
