I absolutely LOVE the morning! I don’t know what it is but it’s my favorite part of the day…it’s peaceful, quiet and just sets the tone for your day. I love sipping on my hot cup of coffee and making a breakfast sandwich!
Not to toot my own horn (but beep beep), I am known for my sandwiches because I loveee a fucking sandwich lol. Making jam is actually really easy along with breakfast sausage and I am a woman of a certain age (proudly 36 lol) so knowing what goes into my body is super important i.e controlling the amount of sugar, sodium and shitty preservatives. Plus homemade tastes that much better! You and your boo will thank you!
Also, whenever I open up my small east coast vibes coffee breakfast shop, this will totally be on the menu! Cheers to Sunday dreaming :-)
Ingredients (makes 4-5 patties, depending how big/small)
american cheese
english muffins, or whatever bread you like
sunny side up egg (duh)
hot sauce
Breakfast sausage (pork, turkey or chicken)
1lb ground pork, or whatever protein you like
1-2 teaspoons red pepper flakes
1-2 teaspoons fresh sage, chopped
1 teaspoon ea. kosher salt & black pepper
1 tablespoon maple syrup (like dark maple syrup)
Directions
mix all ingredients together & form patties.
In a cast iron pan on medium heat with a little neutral cooking oil, cook patties on each side about 3-4 minutes each, until done.
Toast your bread, fry your egg until the whites are set, melt your cheese on top of the sausage, add lots of strawberry jam & top with some hot sauce! ENJOY!
Strawberry Vanilla Bean Jam (makes about 1 cup)
1lb strawberries, washed & stems cut off
extra credit if they are from the farmers’ market lol
1 lemon, juiced
1/2 cup white sugar
1-2 teaspoons vanilla bean paste
Add all ingredients in a saucepan & boil on high for 10-12 minutes until strawberries are broken down & jammy. The pectin (natural thickener in fruit to set jam) in the strawberries will naturally come out and make the jam nice & thick!
Let cool completely & store in an air tight mason jar!
