A big skillet pancake is a dream of all dreams! I feel like there’s been a huge pancake craze in the last couple of years and I’ve been living for it. My absolute fave is Golden Diner in NYC because their pancake is f*cking amazing!
My ideal pancake is dense af with crispy edges & top that when you cut into it you hear the crunch but is soft & pillowy in the middle

Also, the whipped vanilla cream is actually the start to my banana pudding and while I was making it for a friends bday/housewarming, I just scooped a little onto the pancake that I made for myself that morning and omggggggg….mind-blown!
