chicken tinga tacos + cabbage slaw

My lovee of tacos runs deep! For those of you that are new here, after I quit my job in 2021 I did an eat, pray, eat (love) trip to Mexico for a month. I cooked with these amazing women (pic below) in this little kitchen that was VERY hot but I learned how to make some amazing authentic dishes including chicken tinga!
I simplified the recipe for you guys because they used dried peppers, which can totally be found here in the states but wanted to make it easy for y’all…like a good weeknight dish so the recipe uses chipotle peppers in adobo sauce (thee best!) It gives the dish a nice smokey flavor!
Also, because we love texture in food, I made a good crunchy cabbage slaw the compliments the spicy tinga nicely!
