This dish is one of my absolute favorites that I was raised on. Essentially it’s Puerto Rican stewed chicken and it’s ultimate comfort. This dish was always on repeat growing up (me & my brother’s favorite) and whenever I make it, it just reminds me of my mom…the original Puerto Rican princess lol.

Now usually it’s made with parts of the chicken, bone-in & skin on but I like to save a little time and use a rotisserie chicken. I’m a white meat girl so I shred the chicken breast but feel free to use both white & dark meat!
