guava bbq sauce + (baked) chicken wings

It’s the fourth of july even though our democracy is truly crumbling before our eyes…however lol let’s grill (or bake) !!
Unfortunately, we’re not allowed a grill in our apt building here in LA (booooo tomato tomato tomato) so I baked these and made this guava bbq sauce that I am absolutely OBSESSED WITH!
Originally, my hopes were to do a cherry bbq sauce but my cherries were bleh this time so guava bbq sauce it is…just as good!
I am a tangy, spicy, sweet bbq sauce girl and this is exactly that so enjoy! Also, I like to a mustard rub for my wings!
Ingredients (Serves 2-4, depending how many wings you eat lol)
1lb whole chicken wings
1 teaspoon each kosher salt & black pepper
1 tablespoon your favorite cajun seasoning
1 teaspoon each of garlic powder & onion powder
1 tablespoon hot sauce
1-2 tablespoons yellow mustard
Guava BBQ Sauce
1/2 cup ketchup
1/3 cup guava jelly
1/4 cup white vinegar (or more)
2 tablespoons dark brown sugar
1 tablespoon worcetershire sauce
1 tablespoon whole ground mustard
1 teaspoon of your favorite cajun seasoning
2 chipotle peppers in adobo sauce, roughly chopped
salt & pepper to taste

large sheet tray
wire rack
basting brush
sauce pan
teaspoons & measuring cups
non-stick cooking spray
Directions
Season your chicken wings with all of the above: yellow mustard, hot sauce, cajun spice, salt, pepper, onion powder & garlic powder. I like to at least do it overnight but 4-6 hours work too.
Guava BBQ sauce: In a sauce pan on medium heat, add all the ingredients for the bbq sauce and let simmer for 10-15 minutes. Adjust seasonings to taste, like if you like it more tangy or spicy or sweet or more ketchup based, it’s up to you! Once you turn it off the heat, it will thicken up.
Pre-heat oven to 400 degrees. Place a wire rack over your sheet tray and spray with non stick cooking oil.
pro-tip: you reallllly want a wire rack when baking chicken wings to ensure crispy skin all around! Think of it like heat from the oven is going all around the wings for it to get crispy!
Place chicken wings on wire rack and place in oven for 25-30 minutes. Add the 15 minute mark, flip over.
Lower heat to 375 and cook for about 10-15 minutes. Basting with BBQ sauce in between so they get nice & sticky!
Serve with some ranch or blue cheese on the side & more bbq sauce!
