mango chia seed pudding

Another chia seed pudding, thanks to Nate’s Organic Raw Unfiltered Honey! You guys know I love a chia seed pudding and adding various in season fruits make it even better. For this one, mangos aren’t quiteeeee in season yet but I was craving some plus they are high in fiber so chia seeds & mango are a fiber win, win!

Ingredients
1 cup organic chia seeds
1/2 cup milk of your choice (I am back on the whole cow!
1 cup greek yogurt
2-3 tablespoons Nate’s Organic Raw & Unfiltered Honey
vanilla extract measured with your heart
a sprinkle of Maldon flakey sea salt
garnish: mango cubes, a drizzle of honey & flakey finishing salt
Tools
large prep mixing bowl
whisk
measuring cups & spoons
small food containers for storage , purchased mine from Amazon
Directions
For the pudding: In a large mixing bowl add all ingredients, whisk together until well combined and taste to adjust seasonings.
Add the chia seed pudding into small containers and let it thicken up in the fridge, about an hour!
Top with mango chunks, a drizzle of honey & some flakey sea salt!



I’ve made this recipe twice this week and it’s a keeper. Perfect for these hot Miami days!
