If you follow me on IG then you may have seen my recent partnership go live with Nike!! Yayyyy! Nike released a special Air Max 1 called ‘it’s in the sauce’ so obviouslyyyy I had to do a smash burger with special sauce…get it!? :-)
Anyway, recipe is below if you want to try it!
Ingredients (makes 4 burgers)
1lb wagyu ground beef (honestly, treat yourself)
if you can’t find wagyu you can grab 80/20 ground beef. Tip: 80/20 means the amount of fat that is in beef so a good rule of thumb is to always buy 80/20 (20% fat) & you want all the fat when making burgers
I like to roll them and fit them into 1/3 measuring cups
1 white onion, thinly sliced
tip: use a mandolin to get super thin onion slices
let’s be real here, the only buns that matter for burgers!
toasted in a little butter!
american cheese
Special Sauce
1/4 cup ketchup
1/4 cup mayo
1/3 cup bread & butter pickles, chopped
1-2 teaspoons of lousiana hot sauce (or whatever hat sauce you like)
1/2 teaspoon garlic & onion powder
salt & pepper, to taste
optional toppings: LTO & more pickles!

Directions
Special sauce: combine all ingredients together for special sauce & taste to adjust seasoning! I like a little spice to mine so I added more hot sauce lol duh!
In a screaming hot cast iron on medium high heat, add the ball of meat and immediately press down to make it flat with a burger smash, season with salt & pepper then add thinly sliced onions before flipping over .
tip: you don’t need any oil because the burger has enough fat! oil = fat!
The burger is going to cook quick about 3 minutes, depending on your stove to develop a nice crust!
Flip so onions are face down and the other side cooks & onions get nice & melty + charred, about 2 minutes. Season with salt & pepper.
Add american cheese & let melt.
Top burger buns with special sauce, melty cheesy crusty burger and whatever toppings you like!
