southwestern chicken salad with charred corn pico + cilantro lime dressing

I’m not gonna lie, whenever there is a southwestern taco salad situation on the menu, I’m definitely going to order it. I live for a taco in a bowl! IDK if it’s the charred corn pico and all the fixings but I love it. This is my take on a southwestern chicken salad and the cilantro lime dressing you will have in your homemade salad dressing rotation forever!

Note: I love, like loveeee rotisserie chicken! I will sometimes buy one for the week and use the breasts for my salads and save the carcass in the freezer for chicken stock. For this salad to take it up a notch, I love to shred some chicken, add it to a cast iron pan with a little oil, my fave cajun seasoning and some hot sauce and BOOM done.
