I loveeee a good roasted whole chicken! There’s nothing like it, plus roasting a whole chicken, you can have it for the whole week and use it for salads, sandwiches, etc…also, be sure to save the carcass (bones & such) to make homemade chicken stock!
Alsoooooo, if anyone has been to Pio Pio in NYC (iykyk) then you know what this green sauce it! It’s herby, spicy & garlicky!
This is a VERY simple roast chicken using just salt & pepper. I beg of you, to use fresh cracked black pepper (straight from the pepper mill) and Maldon sea salt. Usually this is a finishing salt, but I love the big crystals of salt that you get in a bite of chicken…delish! Also, the chicken makes a light little white wine sauce that I like to spoon over the potatoes!
