We are SO back for another summer salad & this one is an absolute fave of mine because…IT IS WATERMELON SEASON!
I picked up the juiciest, sweetest watermelon (with seeds) from the farmers market and also grabbed some Dungeness crab (expensive af but #treatyoself) and made this salad immediately. This salad is inspired by one of my fave New Orleans restaurants, Herb Saint. They have this watermelon gazpacho topped with crab this is so insanely good! I didn’t want cold soup lol so I made a deconstructed one & it was just as good!
